This is a great quick and easy lunch which you can take to work and make in 5 mins. You just need to prepare it and take it with you. And delicious, nutritious and yes, you can do it. It's all about really good quality ingredients. It won't be the same using floppy vegetables.
In the morning take a tub or glass jar of bone broth out of the freezer. Slice some beef really thinly. Cut up whatever vegetables you have, broccoli, spinach (don't bother cutting that up) kale,zucchini, mushrooms (we used shitake, but any will do, cut up some herbs as well, a big handful of coriander would be nice, but parsley will be just as good (and packed with Iron, vitamin A and vitamin C by the way) Pack all the ingredients together so that the frozen broth keeps your beef cool , by the time lunch comes around it will have defrosted a little but that's what you want.
Put all your ingredients bar the Broth into a bowl and then heat up the bone broth to bubbling and slowly pour over your beef, this will cook it enough, you will see if turn from pink to brown as the heat from the broth cooks it. Add a squeeze of lime juice. That's it ! This should keep you going and be totally delicious without giving you that sleepy after lunch feeling.
